Description

This bold and flavorful pasta salad brings together the perfect balance of sweet, spicy, and tangy  thanks to the irresistible hot honey dressing! Packed with fresh veggies, al dente pasta and a kick of heat, this dish is perfect for picnics, potlucks, or as a zesty side for grilled mains.


Ingredients

For the Salad:

  • 300g (10 oz) rotini or bowtie pasta

  • 1 cup cherry tomatoes, halved

  • 1 cucumber, diced

  • 1 red bell pepper, chopped

  • ¼ red onion, finely sliced

  • ½ cup crumbled feta cheese

  • ¼ cup chopped fresh parsley

  • ½ cup cooked chickpeas (optional, for added protein)

For the Hot Honey Dressing:

  • 3 tbsp honey

  • 1 tbsp olive oil

  • 2 tsp Dijon mustard

  • 12 tsp hot sauce (adjust to taste)

  • 1 tbsp lemon juice or apple cider vinegar

  • 1 clove garlic, minced

  • Salt and black pepper to taste


Instructions

  • Cook the Pasta:
    Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and rinse with cold water to cool.

  • Prepare the Dressing:
    In a small bowl or jar, whisk together honey, olive oil, Dijon mustard, hot sauce, lemon juice or vinegar, minced garlic, salt, and pepper until smooth.

  • Assemble the Salad:
    In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, red bell pepper, red onion, parsley, and chickpeas (if using). Drizzle the hot honey dressing over the top.

  • Toss and Chill:
    Mix well to evenly coat all ingredients. Gently fold in the crumbled feta. Cover and chill for at least 30 minutes for the flavors to meld.

 

  • Serve:
    Serve cold or at room temperature. Garnish with extra herbs or a drizzle of hot honey if desired.
