Zesty Balsamic Vinaigrette Dressing

A light, tangy, and slightly sweet dressing that elevates salads, grilled vegetables, and even marinades. This simple homemade vinaigrette is healthier and fresher than store-bought versions.

Ingredients:

  • ½ cup extra virgin olive oil
  • 3 tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey (or a natural sweetener of choice)
  • 1 small garlic clove, finely minced (optional)
  • ½ teaspoon sea salt (or to taste)
  • ¼ teaspoon freshly ground black pepper

Directions:

  1. In a small bowl or jar with a tight lid, whisk (or shake) together the balsamic vinegar, Dijon mustard, honey, garlic, salt, and pepper.
  2. Slowly drizzle in the olive oil while whisking until fully combined and emulsified.
  3. Taste and adjust seasoning as needed.
  4. Store in an airtight jar in the refrigerator for up to 1 week. Shake well before serving.
