Slow Cooker Lemon Garlic Chicken

This crockpot classic delivers juicy, tender chicken infused with the bright freshness of lemon, the savory depth of garlic, and aromatic herbs. Perfect served over rice, quinoa, or with roasted vegetables for a complete, comforting meal.

Ingredients:

  • 4 bone-in, skinless chicken thighs (or breasts)
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 medium onion, thinly sliced
  • 1 lemon, juiced (plus 4 lemon slices for cooking)
  • 1 teaspoon dried oregano
  • ½ teaspoon paprika
  • ½ teaspoon salt (to taste)
  • ¼ teaspoon black pepper
  • ½ cup low-sodium chicken broth (or water)
  • Fresh parsley for garnish

Directions:

  1. Prepare the Chicken: Pat the chicken dry and season both sides with salt, pepper, paprika, and oregano.
  2. Sauté for Flavor (Optional): In a skillet, heat olive oil and lightly brown chicken for 2–3 minutes per side. This step is optional but adds a richer flavor.
  3. Load the Crockpot: Place sliced onions and garlic at the bottom of the crockpot. Add chicken on top.
  4. Add Liquids: Pour lemon juice and chicken broth over the chicken. Place lemon slices on top.
  5. Slow Cook: Cover and cook on Low for 6–7 hours or High for 3–4 hours, until the chicken is tender and fully cooked.
  6. Finish & Serve: Garnish with fresh parsley and serve warm with rice, quinoa, or steamed vegetables.
