Ingredients

  • 4 boneless skinless chicken breasts or thighs

  • 5 garlic cloves, finely minced

  • 1 cup freshly grated parmesan cheese

  • 4 tbsp unsalted butter

  • 2 tbsp olive oil

  • 1 tsp Italian seasoning

  • Salt & pepper to taste

  • 2 tbsp chopped fresh parsley (for garnish)

  • 1 tbsp lemon juice (optional, for brightness)


Instructions

  1. Prep the Chicken: Pound chicken to even thickness. Season with salt, pepper, and Italian seasoning.

  2. Preheat Griddle: Set Blackstone griddle to medium-high heat. Add olive oil and 1 tbsp butter.

  3. Cook Chicken: Place chicken on the griddle. Sear for 5–7 minutes per side or until golden and cooked through.

  4. Add Garlic: In final 2 minutes of cooking, add minced garlic to the butter on the griddle. Stir constantly to avoid burning.

  5. Parmesan Finish: Sprinkle cheese over the chicken, then cover with a melting dome or foil to allow cheese to melt.

  6. Serve: Drizzle with lemon juice, garnish with parsley, and serve hot.

Notes

  • Use freshly grated parmesan not pre-shredded for best texture and melting.

  • Thighs stay juicier than breasts, but both work well.

  • To make it spicy, add crushed red pepper flakes with the garlic.
