Ingredients:
- 1 lb sirloin steak (cut into bite-sized cubes, fat trimmed)
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 4 cloves garlic (minced)
- 1/2 teaspoon crushed red pepper flakes (adjust to heat preference)
- 8 oz penne or fettuccine pasta (uncooked)
- 2 cups beef broth (low sodium)
- 1 cup milk (or heavy cream for extra richness)
- 1/2 cup grated Parmesan cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika (optional)
- Fresh parsley (chopped, for garnish)
Directions:
- Sear the Steak: Heat olive oil in a large deep skillet or pot over medium-high heat. Season steak cubes with salt, pepper, and paprika. Sear on all sides until browned (about 4–5 minutes). Remove and set aside.
- Sauté Garlic & Spice: In the same pot, reduce heat to medium. Add butter, minced garlic, and red pepper flakes. Cook until fragrant (about 1 minute).
- Cook the Pasta: Add uncooked pasta, beef broth, and milk. Stir and bring to a gentle boil. Reduce heat and simmer uncovered for 10–12 minutes, stirring occasionally, until pasta is tender and sauce thickens.
- Add Cheese & Steak: Stir in Parmesan cheese and return the steak to the pot. Toss everything together and simmer for another 2–3 minutes until heated through.
