Grilled Chicken Caesar Salad with Crunchy Homemade Croutons

A hearty flavor-packed salad featuring juicy grilled chicken, crisp romaine lettuce, and golden croutons tossed in a rich, creamy dressing a satisfying twist on a classic favorite!

Ingredients:

For the Salad:

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and black pepper to taste
  • 1 large head romaine lettuce, chopped
  • 1/4 cup shaved Parmesan cheese

For the Croutons:

  • 2 cups day-old French bread, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp dried oregano

For the Caesar Dressing:

  • 1/2 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1 tsp Worcestershire sauce (halal-certified)
  • 1 garlic clove, minced
  • Salt and pepper to taste
  • 2–3 tbsp water to thin, if needed

Directions:

  1. Prepare the Croutons:
    Preheat oven to 375°F (190°C). Toss bread cubes with olive oil, garlic powder, salt, and oregano. Spread on a baking sheet and bake for 10–12 minutes or until golden and crispy. Let cool.
  2. Grill the Chicken:
    Rub chicken breasts with olive oil, garlic powder, onion powder, salt, and pepper. Grill over medium heat for 5–6 minutes per side or until fully cooked (internal temp: 165°F/74°C). Let rest, then slice thinly.
  3. Make the Dressing:
    In a small bowl, whisk together mayo, Dijon mustard, lemon juice, Worcestershire sauce, and minced garlic. Add water a little at a time until desired consistency. Season with salt and pepper.
  4. Assemble the Salad:
    In a large bowl, combine chopped romaine, grilled chicken slices, Parmesan cheese, and croutons. Drizzle with Caesar dressing and toss well.

  • Grill the Chicken:
    Coat chicken with olive oil, garlic powder, onion powder, salt, and pepper. Grill over medium heat for 5–6 minutes per side until fully cooked (165°F internal temp). Let rest for 5 minutes, then slice.

  • Prepare the Dressing:
    Whisk together mayo, Dijon mustard, lemon juice, Worcestershire sauce, and garlic. Add water to adjust thickness if needed. Season with salt and pepper.

 

  • Assemble the Salad:
    In a large bowl, combine chopped romaine, grilled chicken slices, Parmesan, and cooled croutons. Drizzle with Caesar dressing and toss gently.

Notes

    • Use halal-certified Worcestershire sauce to ensure compliance.
  • Substitute Greek yogurt for mayo if you prefer a lighter dressing.

  • Croutons can be stored in an airtight container for 3–4 days.
