Ingredients

  • 2 boneless chicken thighs or chicken chops (skin-on preferred)

  • 1 tablespoon olive oil

  • 2 tablespoons unsalted butter

  • 4 cloves garlic (minced)

  • 1 teaspoon fresh thyme or rosemary (or 1/2 tsp dried)

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • Optional: 1/4 teaspoon paprika for extra color

  • Lemon wedges (for serving)


Instructions

  1. Prep Chicken: Pat chicken dry with paper towels. Season both sides with salt, pepper, and optional paprika.

  2. Heat Pan: In a large skillet over medium-high heat, add olive oil.

  3. Sear Chicken: Place chicken in the hot skillet, skin-side down (if using skin-on). Cook for 5–6 minutes until browned, then flip and cook another 5 minutes until cooked through (internal temp should be 165°F / 74°C).

  4. Add Garlic Butter: Reduce heat to medium. Add butter, minced garlic, and thyme/rosemary to the pan. Tilt the pan slightly and spoon the melted garlic butter over the chicken for 1–2 minutes.

  5. Serve: Remove from heat. Let rest for a minute, then serve with lemon wedges and your favorite sides.
