Ingredients

2 boneless chicken thighs or chicken chops (skin-on preferred)

1 tablespoon olive oil

2 tablespoons unsalted butter

4 cloves garlic (minced)

1 teaspoon fresh thyme or rosemary (or 1/2 tsp dried)

1/2 teaspoon salt

1/2 teaspoon black pepper

Optional: 1/4 teaspoon paprika for extra color

Lemon wedges (for serving)
Instructions

Prep Chicken: Pat chicken dry with paper towels. Season both sides with salt, pepper, and optional paprika.

Heat Pan: In a large skillet over medium-high heat, add olive oil.

Sear Chicken: Place chicken in the hot skillet, skin-side down (if using skin-on). Cook for 5–6 minutes until browned, then flip and cook another 5 minutes until cooked through (internal temp should be 165°F / 74°C).

Add Garlic Butter: Reduce heat to medium. Add butter, minced garlic, and thyme/rosemary to the pan. Tilt the pan slightly and spoon the melted garlic butter over the chicken for 1–2 minutes.

Serve: Remove from heat. Let rest for a minute, then serve with lemon wedges and your favorite sides.
