Fudgy Zucchini Brownies – Moist, Rich and Veggie-Packed Bliss!

Description

These brownies are everything you love: super fudgy, ultra chocolatey and secretly packed with zucchini for unbeatable moisture. You won’t taste the veggies  just pure brownie goodness in every bite!


Ingredients

Scale
  • 1½ cups all-purpose flour

  • ½ cup unsweetened cocoa powder

  • 1 tsp baking soda

  • ½ tsp salt

  • 1 cup sugar (or coconut sugar)

  • ½ cup vegetable oil

  • 2 tsp vanilla extract

  • 2 cups finely grated zucchini (do not drain)

  • ½ cup chopped walnuts or chocolate chips (optional)


Instructions

  1. Preheat the Oven:
    Preheat to 175°C (350°F). Line an 8×8-inch baking pan with parchment paper.

  2. Mix Dry Ingredients:
    In a large bowl, combine flour, cocoa powder, baking soda, and salt.

  3. Add Wet Ingredients:
    Stir in sugar, oil, and vanilla. Fold in zucchini  the batter will look thick and dry at first but becomes moist as zucchini releases water.

  4. Optional Add-ins:
    Gently fold in chocolate chips or walnuts if using.

  5. Bake:
    Spread the batter evenly in the pan. Bake for 30–35 minutes, or until a toothpick comes out with moist crumbs.

  6. Cool and Slice:
    Let cool completely before slicing into squares for the best texture.
