Ingredients

cups mashed potatoes (cold and well-seasoned)

1 cup shredded cheddar cheese (or mozzarella for a milder flavor)

2 large eggs

1/4 cup all-purpose flour

1/4 cup chopped green onions or chives (optional)

1/4 teaspoon garlic powder

1/4 teaspoon black pepper

1/4 teaspoon salt (adjust to taste)

1/2 teaspoon baking powder

2 tablespoons melted butter (for brushing or greasing muffin tin)

Optional: 2 tablespoons grated Parmesan for topping
Instructions

Preheat Oven: Set your oven to 400°F (200°C). Grease a mini muffin tin with butter or spray.

Mix Ingredients: In a mixing bowl, combine mashed potatoes, cheese, eggs, flour, green onions, garlic powder, pepper, salt, and baking powder. Mix until smooth and fluffy.

Scoop Into Tin: Spoon the mixture into each section of the muffin tin, filling about 3/4 full. Sprinkle with Parmesan if using.

Bake: Bake for 20–25 minutes or until the tops are golden brown and slightly crisp.

Cool & Serve: Let cool for 5 minutes before gently removing. Serve warm and enjoy!
