Fluffy Mashed Potato Cheese Puffs

Golden on the outside, soft and cheesy on the inside these delightful puffs are the perfect way to turn leftover mashed potatoes into a crispy, crowd-pleasing treat!

Ingredients:

  • 2 cups mashed potatoes (cold and well-seasoned)
  • 1 cup shredded cheddar cheese (or mozzarella for a milder flavor)
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 1/4 cup chopped green onions or chives (optional)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt (adjust to taste)
  • 1/2 teaspoon baking powder
  • 2 tablespoons melted butter (for brushing or greasing muffin tin)
  • Optional: 2 tablespoons grated Parmesan for topping

Directions:

  1. Preheat Oven: Set your oven to 400°F (200°C). Grease a mini muffin tin with butter or spray.
  2. Mix Ingredients: In a mixing bowl, combine mashed potatoes, cheese, eggs, flour, green onions, garlic powder, pepper, salt, and baking powder. Mix until smooth and fluffy.
  3. Scoop Into Tin: Spoon the mixture into each section of the muffin tin, filling about 3/4 full. Sprinkle with Parmesan if using.
  4. Bake: Bake for 20–25 minutes or until the tops are golden brown and slightly crisp.
  5. Cool & Serve: Let cool for 5 minutes before gently removing. Serve warm and enjoy!
