Ingredients:
- 2 cups mashed potatoes (cold and well-seasoned)
- 1 cup shredded cheddar cheese (or mozzarella for a milder flavor)
- 2 large eggs
- 1/4 cup all-purpose flour
- 1/4 cup chopped green onions or chives (optional)
- 1/4 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt (adjust to taste)
- 1/2 teaspoon baking powder
- 2 tablespoons melted butter (for brushing or greasing muffin tin)
- Optional: 2 tablespoons grated Parmesan for topping
Directions:
- Preheat Oven: Set your oven to 400°F (200°C). Grease a mini muffin tin with butter or spray.
- Mix Ingredients: In a mixing bowl, combine mashed potatoes, cheese, eggs, flour, green onions, garlic powder, pepper, salt, and baking powder. Mix until smooth and fluffy.
- Scoop Into Tin: Spoon the mixture into each section of the muffin tin, filling about 3/4 full. Sprinkle with Parmesan if using.
- Bake: Bake for 20–25 minutes or until the tops are golden brown and slightly crisp.
