Description

Soft, chewy and bursting with sweet apricot flavor, these easy crisp bars are made with a buttery oat crumble that doubles as the base and topping. Perfect for snacks, parties, picnics or tea-time  a versatile treat everyone will love!


Ingredients

  • 1 cup all-purpose flour

  • 1 cup rolled oats

  • ½ cup packed brown sugar

  • ½ tsp baking soda

  • ¼ tsp salt

  • ½ cup unsalted butter, melted

  • ¾ cup apricot preserves (ensure no added alcohol)

  • ½ tsp vanilla extract (use alcohol-free extract if needed)


Instructions

  • Preheat the oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper or lightly grease it.

  • Combine dry ingredients: In a large bowl, stir together flour, oats, brown sugar, baking soda, and salt.

  • Add wet ingredients: Mix in melted butter and vanilla extract until the mixture is crumbly.

  • Form the base: Press about two-thirds of the crumble mixture into the prepared pan to form an even base.

  • Spread the filling: Evenly layer the apricot preserves over the crust.

  • Top and finish: Sprinkle the remaining crumble mixture on top, gently pressing it down.

  • Bake for 25–30 minutes or until the top is golden and the filling is bubbly.

 

  • Cool completely in the pan, then cut into bars.

Notes

  • Substitute apricot jam with other fruit preserves like peach or mango.

  • For a crunchier texture, add ¼ cup chopped walnuts or almonds to the crumble mixture.
