Easy Apricot Crisp Bars – Sweet, Buttery & Perfect for Any Occasion!

These soft and chewy apricot crisp bars combine a buttery oat crumble with a sweet, jammy apricot center. They’re simple to make, travel well, and are loved by kids and adults alike perfect for potlucks, lunchboxes or cozy tea-time treats!

Ingredients:

  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • ½ cup brown sugar, packed
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter, melted
  • ¾ cup apricot preserves (or jam, with no added alcohol)
  • ½ tsp vanilla extract (ensure alcohol-free version)

Directions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper or lightly grease it.
  2. Make Crust and Topping: In a large bowl, combine flour, oats, brown sugar, baking soda, and salt. Stir in melted butter and vanilla extract until crumbly.
  3. Form the Base: Press about two-thirds of the mixture into the bottom of the prepared pan to form an even layer.
  4. Add Filling: Spread the apricot preserves evenly over the base.
  5. Top It Off: Sprinkle the remaining oat mixture on top and lightly press it down.
  6. Bake: Bake for 25–30 minutes, or until golden and bubbling at the edges.
  7. Cool and Cut: Allow to cool completely in the pan before slicing into bars.
