Description

This bold and flavorful one-pot pasta is packed with juicy Cajun-spiced chicken, tender linguine, and a rich garlic parmesan cream sauce comfort food at its best with minimal cleanup!

Ingredients

Scale
  • 2 boneless, skinless chicken breasts (sliced into strips)

  • 1 tablespoon olive oil

  • 1 tablespoon Cajun seasoning (ensure no wine or pork-derived additives)

  • 3 cloves garlic (minced)

  • 1/2 onion (finely chopped)

  • 2 cups chicken broth (low-sodium)

  • 1 cup milk (whole or 2%)

  • 1 cup heavy cream

  • 8 oz linguine pasta (uncooked)

  • 1 cup grated Parmesan cheese

  • Salt and pepper to taste

  • Fresh parsley (chopped, for garnish)

  • Optional: 1/2 teaspoon paprika for extra color and heat

Instructions

  1. Season & Sear Chicken: In a large pot or deep skillet, heat olive oil over medium-high heat. Toss chicken strips in Cajun seasoning, then sear them until golden and fully cooked (about 4–5 minutes). Remove and set aside.

  2. Sauté Aromatics: In the same pot, reduce heat to medium. Add a splash of oil if needed, then sauté garlic and onions until soft and fragrant.

  3. Add Liquids & Pasta: Pour in the chicken broth, milk, and cream. Stir well. Add uncooked linguine, ensuring it’s submerged. Bring to a simmer.

  4. Cook Pasta: Simmer uncovered for 10–12 minutes, stirring occasionally, until pasta is al dente and liquid has thickened into a creamy sauce.

  5. Finish with Cheese: Stir in Parmesan cheese and cooked chicken. Let it simmer for another 1–2 minutes to meld flavors.

  6. Serve: Season with salt and pepper as needed. Garnish with fresh parsley and a sprinkle of paprika if desired.
