Homemade Neapolitan Cake – Triple Layer Delight

A show-stopping cake featuring three irresistible layers: rich chocolate, sweet strawberry, and classic vanilla. Moist, fluffy and naturally flavored without alcohol or artificial additives this cake brings together the best of all worlds in every slice.

Ingredients:

For the Base Cake Batter (to divide into 3 flavors):

  • 2 ½ cups all-purpose flour
  • 2 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup sugar
  • ¾ cup olive oil (or neutral oil)
  • 3 large eggs
  • 1 cup milk (or almond milk)
  • 2 teaspoons alcohol-free vanilla extract

For the Chocolate Layer:

  • 2 tablespoons unsweetened cocoa powder
  • 1 tablespoon milk

For the Strawberry Layer:

  • ½ cup fresh strawberries, pureed
  • 1 tablespoon sugar (optional, if strawberries are tart)

For the Vanilla Layer:

  • Already flavored with vanilla extract

For Frosting (optional):

  • 2 cups whipped cream (or dairy-free coconut cream)
  • Fresh strawberries + grated dark chocolate for garnish

Directions:

  1. Prepare the Batter: In a large bowl, whisk together flour, baking powder, baking soda, and salt. In another bowl, beat sugar, oil, eggs, milk, and vanilla until smooth. Slowly combine wet and dry ingredients to form a thick batter.
  2. Divide into 3 Bowls:
    • Chocolate Batter: Mix cocoa powder and milk into one portion.
    • Strawberry Batter: Fold strawberry puree into the second portion.
    • Vanilla Batter: Leave as is.
  3. Bake the Layers: Preheat oven to 350°F (175°C). Grease and line three 8-inch round pans (or bake one by one). Pour each batter into a separate pan. Bake for 20–25 minutes, or until a toothpick inserted comes out clean. Cool completely.
  4. Assemble the Cake: Layer strawberry, vanilla, and chocolate cakes with light whipped cream between each layer. Frost the outside with whipped cream or leave semi-naked for a rustic look.
  5. Decorate: Garnish with fresh strawberries, grated chocolate, or a drizzle of strawberry sauce.
