Moroccan Beef Tagine with Apricots

Ingredients

  • 800g beef chuck, cubed

  • 3 tbsp olive oil

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 1 tsp ground cinnamon

  • 1 tsp cumin

  • 1 tsp turmeric

  • ½ tsp ginger powder

  • 1 cup beef stock

  • 1 cup dried apricots

  • 2 tbsp honey

  • 50g almonds, toasted

  • Salt & pepper to taste


Instructions

  • Heat olive oil in a heavy pot, sear beef until browned.

  • Add onion, garlic, and spices. Cook 2 minutes.

  • Add beef stock, cover, and simmer for 1 hour until meat is tender.

  • Stir in apricots and honey, cook for 10 minutes.

  • Season, sprinkle almonds, and serve with couscous.
