Ingredients

800g beef chuck, cubed

3 tbsp olive oil

1 onion, chopped

2 cloves garlic, minced

1 tsp ground cinnamon

1 tsp cumin

1 tsp turmeric

½ tsp ginger powder

1 cup beef stock

1 cup dried apricots
-
2 tbsp honey
-
50g almonds, toasted

Salt & pepper to taste
Instructions

Heat olive oil in a heavy pot, sear beef until browned.

Add onion, garlic, and spices. Cook 2 minutes.

Add beef stock, cover, and simmer for 1 hour until meat is tender.

Stir in apricots and honey, cook for 10 minutes.

Season, sprinkle almonds, and serve with couscous.
